CAFE RIO Recipe


I decided I would make my hunny some red meat....(aren't I nice??). I saw this on a random blog and thought I would give it a try. I've only had Cafe Rio once, so I'm not sure how this really compares,  BUT it was VERY GOOD!  Everyone loved it. I used vanilla yogurt instead of sour cream (plain yogurt would work great). And, since I don't like pork, I just used Roast Beef.  Any ideas on what to use instead of mayo? I wonder if just more yogurt would work? hmmm....
I will make this again.

CAFE RIO Recipe
1 Pork Tenderloin or Roast
1 cup Brown Sugar
1 cup Salsa
Combine these three ingredients and put in slow cooker on low for 6-8 hours or high for 2.5 then low for 2 more hours.
Shred meat after the high 2.5 hours or low for 4.5 hours then put back in slow cooker.

In wrap layer meat over lettuce, rice, cheese, corn, black beans and the following dressing.

Dressing:
1/2 cup green salsa (i used red)
1/2 cup sour cream
1/2 cup mayo
1 green onion
1 garlic clove
1/2 pack dry ranch dressing
1 bunch cilantro (I left it out, I don't like it)
diced jalapenos
1 lime juice.
Blend all together.... longer it sits in fridge better it gets!
