Ok people, I am really not doing that great! I am getting really lazy in my food prep! And, it's not that I don't have healthy food, I just don't always choose the good stuff. I've noticed lately that I've been eating lots of fruit, but not that many veggies. And, I have been resorting a lot to PB & honey sandwiches....they just taste so good! Not that they are bad, but there's def better options.
To make things easy, I will go back to a big salad every lunch.
And, I'm also going to keep a record of what I eat each day. 60lbs seemed to creep on me when I was pregnant with Olivia, and I DO NOT want that to happen again!!!!!! So, I will record ever day for my own purposes just so I AM accountable, AND I can see if I am eating balanced and properly. With, of course, treats in moderation because I want to. :)
Also, I'm really thinking of incorporating fish into our diet, but I am scared. I just don't like fish and neither does Wes. I get my Omega 3's every day and Olivia does as well, but Wes is a hit and miss. He needs those too. Perhaps we can acquire a taste?? I noticed the first time Liv had fish (at Stephanie's house) she ate it right up without a problem. And, I didn't have a problem eating it either! So, how do you guys make fish??? I need some ideas and good recipes!

I always wrap the fish in tin foil with onions, lemon pepper seasoning and a spritz of olive oil, then place it on a baking sheet and bake at 350 for 25-30 minutes or until flakey and tender. It usually tastes pretty good. You could also cook it with some soy sauce, fresh ginger and a little brown sugar for an Asian flair. That's pretty yummy too. Good luck!
