last night I made enchiladas instead of bean tacos, but I didn't use meat, I DID use beans, and then added in a whole bunch of leftovers into it - cauliflower, green beans, salsa, rice...
And it was SO good!!!! It really was just a bunch of vegetables and beans with salsa wrapped in tortillas (i used cumin and chili as the spices) but man was it good!
tonight was supposed to be fish night but things were off today, so B had grilled cheese and V had Princess noodles in tomato sauce, with a side of sushi. I had sushi (okay so I did have fish!)
Then we had a dessert - I made a banana berry smoothie and added in milk and ice cream (this was really for the benefit of kids and hubby) and a little bit of vanilla.
V is starting to eat healthier as well, though not always. Today she had some broccoli and cauliflower for snack with me and ate more than she ususally would. And of course sushi (california), and more nuts as I'm eating more nuts too. She's starting to add veggies and fruits in to her diet more, and I'm grateful for that.
