Ingredients:
6 egg whites, beaten until fluffy
1/2 cup / 120 ml low fat cottage cheese
1 scoop of protein powder
1/2 cup oatmeal, uncooked
1/4 cup wheat germ
1/4 cup of flax seed
1tsp baking powder
1TBSP canola oil
1/2 tsp cinnamon
Preparation:
Place all ingredients except beaten egg whites in a food processor and pulse or blend until mixture is uniform.
Pour blended ingredients into a bowl and add the egg whites. Fold until just blended
Prepare a griddle with cooking spray. Ladle pancake mixture onto griddle and cook until both sides are browned.
*skip the syrup and put a dollop of unsweetened applesauce on each pancake. Or take 1/2 cup of blueberries and 1/2 of raspberries in a small sauce pan and 1TBSP of water. Mash the berries up and stir and bring mixture to a boil. When it begins to get syrupy remove from heat and pour into a jug. Drizzle onto pancakes!!
