Steph Saturday

We went out today as a family, and had lunch out - woohoo A&W burgers!!!! I love "vacation" moments!

And because I can, I will be eating a smore for dessert tonight.

Here is my meal plan for the rest of the week though, and I plan to have no extra food outside of this meal plan too.

breakfast 1 of 3 choices: oatmeal+flax+fruit; toast+avocado/pb+juice; granola+smoothie
snack: nuts, veggies and dip (pref. hummus, or no dip at all even)
lunch: fruit and veggies (random)+soup or sandwhich or leftovers from dinners
snack: fruit and yogurt/cottage cheese
dinner: the 5 dishes I have planned for the week (and expected leftovers) are as follows:

fish with lemon and garlic, rice and veggies (baked or possibly pseudo-caramelized as a treat)
mexican bean soup with bread and salad
baked potatos and a green salad w/veggies in balsamic (with chicken added in for hubby)
bean salad with homemade yam fries
pasta with pesto and veggies

latenight snack: 1 of 6 choices: cheese+crackers; popcorn; granola+yogurt; nachos w/ homemade salsa; trail mix (homemade); toast with spread (butter, pb, almond....)

I think I'm farely happy with this plan for the week. It's well rounded, but still has some variety and tasty treat options thrown in (okay well what I deem tasty treats like cheeses and toasts with spreads, and dip for veggies).
ALSO, this meal plan is something that works for the WHOLE family - even little dude! Although his "snacks" are mostly just formula or nursing right now, so really it's the 3 main meals I worry about for him at the moment.

I'm feeling good!
